Bacon: fast and easy crumbles

Bacon. It needs no introduction. Here we like it every way we can get it. Bacon wrapped chicken, bacon deviled eggs, bacon and Brussel sprouts. Bacon pancakes. Bacon and eggs. Bacon breakfast burrito. Bacon. Bacon.
Let's get this show on the road. Grab your pound of bacon, kitchen shears, a Dutch oven, and your favorite wooden spoon (I got mine here). Put your Dutch oven on the stovetop on medium heat.

Cut the bacon directly into the Dutch oven. It should sizzle as you drop it in and should look like this.

Now give it a little stir, then even it out in the bottom like so.

After 3 minutes or so stir again, and even it our again. Your house should be starting to smell lovely. There's nothing better to cover up smells than bacon. It's one of the first things you must do when you move into a new home, cook bacon.
After around 7 minutes you should start to see browning around the edges and hear popping. This is why I use a Dutch oven, the bacon grease will not pop out onto your stovetop. Mix again and flatten, it's now time to prepare the bacon's final resting place before it gets devoured.

I use a pie plate, but a dinner plate will suffice. Fold 2 sheets of paper towel onto the plate to soak up the grease, like so.

This is where times will differ. We don't discriminate much, but most here like their bacon medium crispy. Leave it in a little longer if you like crunchy bacon.
Turn off your burner and tilt your Dutch oven to scoop out all that scrumptious bacon.
Mmm. Hopefully this batch lasts long enough to add to our lunch.

If the bacon grease is clear I keep it in a mason jar in the spice cabinet to use while making certain dishes. Normally I save a pickle jar and simply pour it in and after it cools I keep it under the kitchen sink until my jar is full.
My plumber recommends that you NEVER pour it down the sink, even after running hot water.
That will make a plumber very unhappy.
Our last move put us close enough to shop bi-weekly at a warehouse store. Which means I can buy bacon in bulk. More to come on my warehouse buys and how I store them.
